PEAS WITH ONIONS AND PIMIENTOS
Water
2 pounds green peas in pods, shelled (2 cups) (or I package (10 ounces) frozen peas)
1 cup pearl onions, peeled (or 1 cup frozen small onions)
1 teaspoon sugar
1/4 teaspoon salt
2 tablespoons butter or margarine
2 tablespoons heavy (whipping) cream
1 tablespoon chopped pimiento
In medium saucepan bring 1/2 inch water, peas, onions, sugar and salt to boil. Reduce heat; cover and simmer 10 to 12 minutes or until peas and onions are tender. (If using frozen vegetables, start with the onions; add peas for last 5 minutes.) Drain well.
Toss with butter until butter melts. Stir in cream and pimiento.
TO COOK IN A MICROWAVE:
In microwave oven cook peas, onions, sugar, salt and 2 tablespoons water in covered 1 1/2-quart casserole on high, stirring once, 5 to 7 minutes or until tender. Let stand 3 minutes. Continue as above.
Makes 4 servings
