re: Devonshire coffee cake - substitute ok?

Good Afternoon. As you know devonshire cream is also known as Clotted cream. It is very popular in the United Kingdom countries. It is not easy to purchase in this country because this cream contains approx. 52-55% butter-fat. In America we have 36 to 40 % butter-fat content in our heavy whipping cream. Now then, If you have or can get a coffee cake recipe that you like you can substitute yogart & see if that satisfys your yearning. If not, I have a method to increase the butter-fat in heavy whipping cream (36/40%) To increase it too Approx 50/53% butter fat then you can make your own devonshire cream. There is such a recipe known as "MOCK Devonshire cream That I can post to you if you are willing to try it. OR if you would like to purchase a cake I can provide you with that information as well.
