re: fudge won't harden

This has happened to me a few times in my quest for perfect fudge. Two things: either you didn't cook the fudge to soft ball stage, using a good candy thermometer (in which case you have some really delicious fudge sauce for ice cream) OR you didn't beat the fudge until it began to lose its gloss. You may be able to stir it until it hardens more, but more likely the sugar in it will begin to granulate and the fudge will be far from good. Better luck next time-sorry!
