I never knew whether my Mom had ever seen a recipe for these or whether the idea was born of necessity during lean times. They do make a little meat go a long, long, way. You are exactly right about spreading the meat all the way to the very edges, too. It is great to find that such a simple dish has a history to it. I am in Mississippi, you are in Washington, and Carolyn is in Kentucky. I wonder if anyone else out there is a fan of this recipe from the past - Hamburger Toast?
