re: hard cinnamon rolls

There are a number of things to consider - you could be baking in too hot an oven - hence they rise too fast and overcook - you could be over proofing, they need to be in the middle of the oven, type of pan - metal vs glass makes a difference, and you might try a dab of butter on top of each - will soften the tops a bit.
