Pancetta is Italian bacon.It comes in the roll form and either sweet or hot.

Traditionally it is used primarily as a taste enhancer. One 1/4 inch round is sliceced into thin strips and added to a heating pan-and left there until the fat is reduced. The meat is taken out and discarded. The 1/4 in. round is enough for a whole medium sized onion or equivalent sized other veggie.

It generally is not used like bacon in North America, exceot in fritta, which is an egg based dish similar to an omelet.

It is animal fat.
