You can dice it and saute at the beginning of spaghetti sauce, Brown some and add to minestrone soup. Saute with vegetables and mushrooms for pasta primavera. I agree. Don't let it go to waste. I cut it into serving portions and freeze so as to have it on hand at all times. Biba Caggiono uses it frequently in her recipe books. Check it out.
