re: pickled asparagus

Judy, if you are going to keep it more than just 2 months, it needs to be water bathed. It usually takes about a month for the flavors to really get through the asparagus once it is made,too. Perhaps you could water bath it at a friends house. I also see you are in Arizona, so the weather should be nice. Some people use a propane stove to do their canning outdoors,too.
I,too, am looking forward to making my pickled asparagus soon! We really like it.
