I don't think dry instant pudding mix is available where you are. This kind of mix makes a dessert that is a thickened, sweetened, silky smooth milk dessert. It comes in various flavors, like vanilla, chocolate, and butterscotch If you can imagine a much thicker, spoonable version of Dr. Bird's custard, that's what instant pudding is like.

Dry pudding, which can be added to a cake mix, is made up of sugar, food starch (usually what you know as corn flour), dry milk powder, artificial flavors and emulsifiers. The emulsifier is what's relevant to our discussion here. It's the main ingredient which, when added to cake mix, makes the baked cake moister than a cake mix without that extra emulsifier. Personally, I don't find cakes with pudding mix added all that much moister than those without, but I'm sure it's an individual preference.

You could achieve a similar effect just by adding an extra egg yolk to a cake mix.
