re: Puerco Pibil

Puerco Pibil is a recipe found in the movie Once Upon A Time In Mexico. It really is worth the effort, though I am seeking conversion measurements for the whole annato for the ground I have found (much easier!! and not so grainy). It's my brother's favorite recipe. It can be made without the peppers and without the banana leaves, but the flavor, though subtle, IS slightly better with than without. But don't let the lack of banana leaves keep you from making this knock out dish.
