Recipe: Puerco Pibil

Main Dishes - Pork, Ham
Puerco Pibil

Grind:
5 tbsp annatto seeds
2 tsp cumin seeds
1 tbsp whole black pepper
1/2 tsp whole cloves
8 pebbles allspice

Blend the ground spices with:
2 Habanera peppers cleaned and chopped*
1/2 cup orange juice
1/2 cup white vinegar
8 cloves garlic
2 tbsp salt

Add:
juice of 5 lemons
splash/glug of tequila

Cut 5 LB Pork Butt cut into 2 inch cubes. Place with the marinate, in a large zip lock bag to soak.

Line an 9x13-inch baking pan with banana leaves. Pour in pork and marinate. Cover with banana leaves and seal the pan with foil.

Bake in a 325 F degree oven for 4 hours.

Helpful Hints
Banana leaves are optional.

*Take it easy on Habanera peppers. (They can be optional too.) HOT! HOT!! HOT!!!
