ISO: What is Puerco Pibil?

I was perusing a cooking site when I came across a recipe for Achiote Paste. I have heard of the seeds before, but didn't quite know what to do with them. Anyway, this paste looks heavenly to use and it recommended using it to make Puerco Pibil. Well, I know Puerco is Pork. When I did a search for this specific title nothing came up. However, I did find quite a few recipes for "mama's pork chops, cuban or creole style. Neither of these recipes had anything Achiote in them. So this is my request, does anyone have a recipe that is specific to Puerco Pibil? I would also be happy to have any recipes that use Achiote Paste, now that I know how to make it homemade.
