I have a recipe that goes back to the 60's and my kids used to ask for it for their birthday cake (kinda non-traditional one, but they liked it)

No real recipe. You know those packages of thin, brittle, dark chocolate ice box cookies you can buy? I believe I remember them as being square about 2 inches square. Anyway, make a heavy sweetened whipped cream/with vanilla added, and take a smear of whipped cream and make a two or three inch stripe down the center of a long flat serving dish. Then start layering out the cookies on top of that thin stripe (this is so it doesn't slide around the plate) You then add a dollop of cream between each cookie spread to the edges. These are stacked horizontally, about 4 or 5 cookies to a stack, and about 3 or 4 stacks in a line tight up to each other. Cream between each cookie, and then frost the entire outside and top. This then sits in the refrigerator overnight, or at least all day - don't rush it.

The majority of the cream soaks into the hard cookies, making them swell into "layers" like cake. Delicious and easy to make. Can be fancy and do curls, nuts, etc on the top. When you slice into it you see all the layers, it's very pretty. As I recall, if you use too much cream between the cookies, it can start sliding around, and then you might need to anchor with toothpicks until it sets up.
