Parkin is a north country (England)
gingerbread and is associated
particularly with Yorkshire. It is
also found in Lancashire and Chesire
and may be bought in almost any
bakery there. The oatmeal used gives
it a nutty flavor and it is very
good with cheese. It keeps for a
long time when stored in a tightly
covered biscuit tin.
