re: Saltless bread problems

Hi Lisa,

I'm looking at The Laurel's Kitchen Bread Book and they say that saltless bread often collapses. This book has three recipes that contain no salt (though not in the bread machine section).

They recommend a ham slicer or any knife similar (long-bladed and serrated). An electric knife works too. You want to saw the bread rather than cut it.

I suggest you check out The Laurel's Kitchen Bread Book at the library and see if they have the answer to your saltless bread problem. It's a great book with lots of information on making bread. There are two versions of this book. The latest one (published in 2003) contains a section on using bread machines which I found very helpful.
