MOJITO SORBET
2 cups sugar
1 cup finely chopped mint leaves (or 1/2 teaspoon spearmint extract)
2 cups boiling water
1 to 1 1/2 cups fresh squeezed lime juice
1/4 cup rum
Mint leaves (for garnish)
Place sugar and chopped mint leaves or spearmint extract in a large bowl or pan and pour boiling water over. Mix at high speed until sugar is completely dissolved. Let mixture stand and steep for at least 30 minutes.
Strain mixture with a fine sieve and let to room temperature. Add lime juice and rum.
Place mixture into ice cream machine and follow manufacturer's instructions.
Remove from machine, put into a container, cover and place in your storage freezer to set up at least 20 minutes.
Serve and garnish with mint leaves.
Makes 13 servings
