re: steak modiga - Use your favorite cut of beef

Good Afternoon. I searched for a recipe for you, but all I could ascertain is that some restaurants use K.C. Strip (N.Y. Cut) steak or Medallions of beef tenderloin cut.

In Italian the word "Modiga" means "Bread crumbs". To coat the article like you do in southern fried chicken. Frankly Cathy, I have never heard of that style of recipe. I would like to suggest to you & your husband that if you do not succeed in locating a recipe for your steak, do a "STEAK ALA PIZZAIOLA". You can do the chicken as well it is known as "Chicken Cacc iatiore". Should you decide to do that I will help you with the doings for it so that you can have a successful dinner party.
