Re: the Raw Beef one...

I appreciate your steak tartare recipes, however, I really do mean raw ground beef w/ raw onion. It's the goofiest thing in my opinion but they really do eat it. I have every intention of getting it from my regular butcher but still want a little advice from anyone who has served it before. BTW, the other one, I found the correct spelling is Seultze. Much thanks!
