Jen, I think it's head cheese, or a verson of it.

My Time life Foods of the world book has a reference to Sulze (2 dots over the u) with head cheese in parenthesis. There is no recipe but the American cooking, Creole book has a recipe for head cheese and called it a savory jellied meat made from the head of a hog. However, their recipe calls for "more readily available" ??...where do they shop?...fresh pigs feet, heart and tongue. I am assuming this recipe would do you no good, but perhaps with this information you can find one that you can use. Good luck, Jeanne
