re: Uses for frozen tomatoes and squash
Misc.Even if all you can make is soup, you can make FABULOUS soup with these! And if you don't have a lot of energy, just toss them in the slow cooker with some stock and aromatics (onion, garlic, ginger, whatever works for you), and some stock or water, and your family will go wow! wherever did you get this fabulous recipe!
You can puree after it is all cooked, or leave it chunky (rustic) and go from there.
Or, make pasta sauce (tomatoes), or chili (tomatoes and squash). Squash is an excellent thickener for chili, soups or stews. In my husband's culture, it is very often used. We tend to overlook it here (in North America).
I have a lot of frozen pumpkin, so I know...if you want it to be like the canned stuff, you need to drain it first. It does tend to be more watery. This is not a big deal for a stew or chili, but is important if you want to use it for baking any breads or cookies. hey, squash cookies...you will be the talk of the neigbourhood! :)!! p.s. make them whole wheat!
I can be more specific, if need be. But there are probably 1001 uses for these very ingredients...you go, girl!
Cheers!
Carolyn!
