re: Vegetarian bonfire recipes

Pam, I was thinking that maybe you could make several pans of vegetarian lasagne (and if you wanted, some meat lasagne for the carnivors). I imagine that it is chilly there and it would be
something that would be hot and comforting. The other dish that came to mind would be vegetarian stew and couscous or brown rice. Instead of serving the stew with rice, you could make it into vegetable pot pies or shepard's pies. Greek lentil soup, getting people to bring Greek salad is another idea, or Cuban black bean soup (I always put a little rice in mine in my attempt to get a complete protein into my girls) and corn bread might be filling and comforting as well. Maybe cheese enchiladas, refried beans, Spanish rice & salads is something everyone would like??!? If I can think of any other ideas, I'll post them later. Oh, one other idea is Tofurkey (Thanksgiving type) dinner if you can get tofurkey. I hope that some of these ideas will be of help to you. I have recipes but they are for smaller amounts (4 - 6 people) but if you want any of them, let me know. (My girls are vegetarians but my husband & I are not so these are things we like to eat and, I think, might satisfy the meat eaters as well.)
