Several Menus for TC

The temptation was too great to pass the opportunity. My favorite cooking is from Spain and this is an opportunity to comment on the occassion. There is no Thanksgiving Day in Spain. Nevertheless I will suggest two Christmas Menus which might be applicable and that I am sure will be appreciated by all your guests. I do have the recipes, therefore, if you are interested, I might provide them. This gathering will take time and effort but it will be greatly appreciated.

Dry White Pened s Wine
Roast Lamb, Castilian Style
Baked Red Cabbage and Apples
Light Red Reserva Wine
Fruits and Cheeses
Marzipan Candies (specialty stores)
Espresso Coffe and Brandy

Menu 2
Cold Fish Timbale with red pepper mayonnaise
Chardonnay wine or Savignon Blanc
Veal Chops with Ham, Mushrooms and Pimiento
Poor Man's Potatoes
Red Rioja Wine or Merlot (California)
Frozen Orange Custard with Blacberry Sauce
Coffee and Brandy.

Spanish people are expressive but conservative. They are a delight. You will have a great time. Congratulatios!
