Recipe: Lentil Stew (using red wine and tomatoes)

LENTIL STEW

1 pound dried lentils, washed, picked over
2 quarts water
2 whole celery stalks, chopped
1 medium onion, chopped
2 whole carrots, chopped
1 clove garlic, minced
1 bay leaf
1/4 teaspoon thyme
1 (1 ounce) can plum tomatoes
1/2 cup red wine

In a large soup kettle, combine all ingredients except wine and tomatoes. Bring to a boil and simmer, over low heat for 1 1/2 hours.

Add tomatoes and wine; simmer 20-30 minutes more.

Makes 8 servings
