Corky, use any of my recipes from my book, The Healthy Oven Baking Book, that bake with applesauce and contain liquid fats, such as canola oil. (it will not work with any recipe containing a small amount of butter). Simply eliminate the canola oil and then, everytime you see one egg, replace it with 2 egg whites. Any recipe with low-fat buttermilk contains a small amount of fat, so substiute it with nonfat yogurt in the recipe. Viola--you will have a no fat dessert.

The Pumpkin Orange Cornbread Recipe is heavenly, the Apricot Corn Cake is delicious, or even try some of my layer cakes: the Fresh Mango and Pecan Layer Cake and the Pumpkin Layer Cake are simply delicious and would be wonderful as a no fat cake. (Use a no-fat cream cheese in the frosting). Let me know if I can help you further.
