Steel-cut Oat Bread (re: Oatmeal Molasses Bread JOC recipe)

Breads - Yeast Breads
Here is the only Oatmeal bread in the Joy of Cooking Cookbook I have found. I happen to have about 300+ cookbooks, but only one JOC.

Steel-Cut Oat Bread
one 5x9 loaf

Have all ingredients about 75 degrees

Measure all ingredients into a mixing bowl:
1 cup steel-cut oats
1/4 cup dark molasses
1 TBS softened shortening
3/4 TSP salt
Pour over these:
2 cups boiling water

Stir in:
2 cups sifted all-purpose flour

While this is cooling,crumble and disolve:
1 cake yeast in 1/4 cup 85 degree water

After soaking for 10 minutes add the yeast mixture to the oats mixture. Work in :
2 cups sifted all-purpose flour

You may incorporate:
(1 cup of broken pecan meats)

Knead shape and proof, allowing dough to rise once in the greased mixing bowl and once in the greased baking pan.
Bake in a preheated 375 degree oven for about 40 minutes.

I hope this helps! I will check the quick breads to see if there is a recipe there as well.
