Recipe(tried): Jack-O-Lantern Preserves

JACK-O-LANTERN PRESERVES

3 quarts pumpkin, sliced thin and diced to size of a nickel or smaller
3 lemons, seeded and ground, including peel
5 lbs sugar
1 tsp cinnamon, or to taste

Slice, wash, and drain pumpkin. Add sugar, mix well, and let stand overnight in sugar.

Drain in morning, boil until it spins a thread, and add pumpkin and lemon. Cook until pumpkin is tender, add cinnamon, boil 5 minutes longer.

Jack-o-lantern is traditional but any fresh cow pumpkin, pie pumpkin, or winter squash can be used.

(Refrigerate and use as you would fresh pumpkin or for longer storage, freeze.)
