CRUSTLESS COCONUT PIE
1 cup granulated sugar
1/4 cup (1/2 stick) butter, melted
2 eggs
1/2 teaspoon vanilla extract
1 cup evaporated milk
1/4 cup all-purpose flour
1 cup flaked sweetened coconut
Preheat oven to 350 degrees F. Lightly grease an 8- or 9-inch glass pie plate.
In a mixing bowl combine sugar and melted butter. Stir in the eggs and vanilla. Mix well. Stir in the evaporated milk.
Stir in the flour and coconut. Pour into the prepared pie plate.
Bake in preheated oven until set in the center and lightly brown around the edges, about 25 to 30 minutes.
Makes 1 pie, 8 servings
