Sun Dried tomatoes for Lynne

Hi, Lynne - sun dried tomatoes are tomato halves that have had the moisture removed from them, either by naturally drying in the sun or by deyhrators/low-temp oven drying. It's like the difference between a grape and a raisin. Removing the water leaves only the pulp, which has a very concentrated tomato flavor. It was one method that people used to preserve summer tomatoes for use during the winter.

They are usually sold two ways - loose/dry in cellophane packages (often found in or near the produce area of the store, sometimes near the nuts/dried fruits); and packed in a jar and covered in oil (often found in the same section of the store as olives/pickles or with other Italian ingredients).

The oil-packed ones are rarely reconstituted in water because the oil has kept them pliable in the jar. Your recipe sounds like it is describing the dry ones, which are usually soaked in water to make them pliable enough to mince and chew.

Canned tomatoes are a different item altogether and probably won't substitute for the sundried kind called for in your recipe.
