Take sun-dried tomatoes and place them in hot water until they are not leathery anymore. They should plump up a bit. You should probably use regular dry ones too. Not the kind you would buy in a jar packed in olive oil. If you don't have sun-dried tomatoes yet, you can find them in the produce section of your supermarket either in bulk or prepackaged.
Or you could make your own, here is a recipe.
Sun-dried Tomatoes

Makes 1 quart
" Not a labor intensive process, but certainly a lengthy one. Once dried, store these tasty gems in the refrigerator. "
4 pounds plum tomatoes (Roma)
salt to taste
Preheat oven to 200 degrees F (95 degrees C).
Wash and halve tomatoes. Gently squeeze out the seeds. Place the tomatoes on a non-stick cookie sheet, and sprinkle with salt to taste.
Bake until tomatoes take on a leathery texture. This could literally take all day; smaller pieces will require less oven time.
