sunk chiffon cake
Misc. Michelle
I have only made chiffon cakes in tube pans and I do not grease the pans. I am told that the reason for not greasing is to enable the cake to "climb and hold on to" the side of the pan as it rises in the oven.
That reasoning seems to make some sense.
What do you think?
