I am also diabetic. I found out last year after I canned all my regular sugared jams.
Glad to hear the Splenda works so well.
I am going to try using frozen unsweetened applejuice mixed with juice and see how it turns out. I am going to use Pomonas Pectin with it.
I am interested in hearing about all the kinds you have made and have been pleased with.
