Tips and hints for evaporated milk

EVAPORATED MILK
Evaporated milk is fresh whole milk that has had 60 percent of the water removed and then homogenized. It is then vacuum-packed in small cans.

Evaporated milk CAN BE USED IN ANY RECIPE THAT CALLS FOR MILK. This includes virtually every recipe category. It is about twice as rich as whole mik and slightly less rich than light cream. It can be whipped and substiuted for whipped cream, both as a dessert topping and as an ingredient in almost any mousse, pudding, chiffon pie, or gelatin salad calling for whipped cream. Also, substituting evaporated milk, you will cut the calories more than 1/2 of whipping cream.

Once a can of evaporated millk is opened, it should be put into the refrigerator immediately. Transfer it to a jar with a tight-fitting lid. Store in refrigerator 5 to 7 days.
