SPICY CRAB CAKES
1 pound fresh crab meat
1 cup fine dry bread crumbs (plus additional for coating)
1/2 cup finely chopped red bell pepper
1/3 cup finely chopped parsley
1 large egg
3 tablespoons mayonnaise
1 tablespoon finely chopped green onion
1 tablespoon ground black pepper
1 1/2 teaspoons Old Bay Seasoning
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon mustard powder
2 tablespoons oil
2 tablespoons butter
Lightly mix all the ingredients together, except oil and butter, and shape into patties. Roll in additional bread crumbs to cover.
Fry the cakes in a mixture of 2 tablespoons of oil and 2 tablespoons of butter.
Serving Ideas: Serve with a papaya salsa or cocktail sauce.
