Recipe: Easy Rice Pudding (no eggs, stovetop, serves 2)

EASY RICE PUDDING

Here is a recipe that I know by heart. I make it all the time, and it can be very low-fat if you use 1% milk!

2 cups milk
1/3 cup uncooked rice
1/4 cup sugar
1/4 tsp ground cinnamon
Dash salt

Cook in heavy saucepan for 40 minutes or until rice is tender.

Makes 2 good-size servings
