Recipe: Daytona Wings
Appetizers and SnacksIn my original post I explained that the Daytona Wing sauce is a combination of the "Bold and Spicy" wing sauce and Hooters Hot Sauce. The Hooters Hot Sauce is the hot sauce they place on every table in the stores. The "Bold and Spicy" wing sauce was a change they made to their barbeque wing sauce. I don't really like the "Bold and Spicy" wing sauce. The old sauce they used was Jackaroo barbecue sauce. If you can find the Jackaroo sauce online, pick it up and spice it up with Hooters Hot sauce or your favorite red pepper sauce. Hooters Hot sauce is composed of red chili peppers of unknown variety but probably cayenne, vinegar, salt and brown sugar. If you can't find Jackaroo, use your favorite bottled barbecue sauce like Bullseye regular. The real secret to Daytona wings is after you toss your wings with the mixture of barbecue sauce and hot sauce, you put the wings in a pan, non-stick or seasoned cast iron work great, and fry them with the sauce on them until the sauce dries up and caramelized onto the wings leaving some areas with a burnt appearance. If you want to clone the "Bold and Spicy" here is the long list of ingredients in descending order of weight. There is a lot of nasty stuff in the list to save money and not worth trying to clone. I think the cultured whey protein gives it a nasty flavor:
