I love your recipe for the layered ice cream cake. My daughter (8) loves the idea of birthday cakes, but never eats them (she and her friends ALWAYS eat the ice cream, tho!)

I think I'll make this for her, and then just decorate it like a regular birthday cake. That way I'll be spending my cooking time much more productively!!
