Cake flour is a soft wheat flour, whereas, all-purpose flour is a combination of soft and hard wheat. You can mix 3/4 cup sifted bleached a/p flour with 2 tablespoons cornstarch as a substitute, however, your final product will be somewhat tougher. happy baking, joy.
