Vegetarian sandwich ideas

Hi Veggie Lover - I'm not sure how much cooking/prep you want to do, but here are some additional ideas for sandwiches you might like to pack for lunch. Vary your bread choices so you don't get sick of the "same old thing" - pita works great, but also think of a french baguette, pumpernickle, whole grain - for me, it's whatever is on sale that week! And, the bread freezes so you can pull out a few slices here and there, if needed.

Anyway, here are some ideas for you (I'm assuming you eat cheese). Please feel free to post a request for a recipe if you need it!:

~cheddar and chutney (I add slivered onion)
~cream cheese and chopped olives
~cream cheese and sliced pickles (I love dill pickles or those “spicy” bread and butter
pickles) - I know this sounds weird, but we had them as kids and I still love them!
~cucumber and cream cheese (add lemon and pepper)
~cucumber and cheddar, with a little onion and definitely tomatoes in season
~egg salads, with some different flavorings: like curry powder or chili powder and cheese
~caponata or ratatouille (eggplant with other vegetables/flavorings) make fabulous sandwich spreads (make a batch and serve it with pasta for dinner, and use the leftovers for sandwiches)
~sweet butter and sliced fresh radishes - add chives if you have them, and a sprinkling of
salt (I make these open-faced for hors d’oeurves and people are always surprised at how good they are)
~roasted peppers (just buy them in a can/jar) and olives dressed with olive oil and sprinkled with feta cheese
~waldorf salad (the apple, raisin, celery, nuts and mayo salad) is great in a pita - add some
grated smoked cheese for variety OR make a variation using pears, omit raisins, and add a
little blue cheese. Watercress is a great addition to either of these.
~ well seasoned ”refried” beans (either pinto or black beans) with avacado slices, cheese, tomatoes, lettuce or sprouts, etc.

And, if you aren’t committed to sandwiches for every meal, you might want to make some salads that you can pack - pasta and veggies (dress with olive oil and lemon juice, or good ranch dressing), or greens with the salad dressing packed in a separate container.
