Watermelon Rind Pickles???

When I was a boy... I remember spending really wonderful times at my grandparents farm... One of the fondest memories I had were of my grandmother's home made watermelon rind pickles...not to mention her amazing chewy molasses cookies!. Unfortunately after my grandmother died...so did so many of her recipes. My mom was never much of a cook since she spent most of her days working so that my brother and I could have all of the things she could only dream of... (God bless her!). Would anyone know how to make Watermelon Rind Pickles??? and be able to explain it in a way that someone who knows nothing about pickling ...would understand??? I would be also grateful for any pickle recipes that might make a good use of carrots, cucumbers or broccoli...
