You might want to try the Cake Mix Doctor cookbook. It has several excellent recipes in it. I also have a few recipes using cake mix as an ingredient in something else, but I don't usually use cake mixes because of the reason you mentioned (they just don't right).

I am not really sure about the frosting. I don't know how easy it will be to make a frosting with whipped cream that is not refrigerated, but there are several fluffy icing recipes that will do the trick without using whipping cream.
