Recipe: Ice Cream Tiramisu and Homemade Coffee Syrup (using ladyfingers, freeze ahead)
Desserts - FrozenICE CREAM TIRAMISU
"A delicious return on a minimal work investment."
1 (12 ounces) package ladyfinger cookies
1 quart vanilla ice cream, softened
1/2 cup coffee syrup (purchased, or recipe follows)
OPTIONAL, FOR SERVING:
Whipped cream, cocoa powder or cinnamon
Cover the bottom of a 9-inch square baking pan with ladyfingers laid side by side. Pour half of the coffee syrup over the cookies.
Put the ice cream into a mixing bowl and beat it with a wooden spoon until it is easily spreadable. Working quickly to minimize further melting, spread half of the ice cream on the ladyfingers. Add another layer of ladyfingers and repeat the process with the coffee syrup and ice cream. Freeze for at least 1 hour.
TO SERVE:
Cut lengthwise and crosswise into thirds. If desired, serve with whipped cream, powdered cocoa, or cinnamon as a garnish.
HOMEMADE COFFEE SYRUP:
If you can't find coffee syrup, you can make a cup by combining 1/4 instant coffee powder, 1 cup water, and 1 cup sugar in a small saucepan and cook until the sugar is dissolved.
Makes 9 squares, each 3-inches square
