EASY PAELLA
This is a very easy recipe - you can make any amount you want, just adjust the portions according to the amount of rice you use and how much of additional "goodies" you want to add.
Instant rice
Chopped onion
Crushed fresh garlic
Tomato sauce*
Chicken broth*
Frozen peas (thawed)
*1/4 cup tomato sauce and 3/4 cup chicken broth for each cup uncooked rice
Additional goodies: shrimp, lobster, chicken, ham, whatever
All measurements are approximate. I like garlic, so I use a lot. Depends on what you want to add.
Saute about a 1/2 cup chopped onions and 3-4 cloves of crushed garlic in about 3-4 tblsp of olive oil until onions are translucent.
Add 2-3 cup instant rice (uncooked) and stir well until all rice is coated with olive oil. If it doesn't look like that's possible, add more olive oil. (If you add too much olive oil, tilt the pan and drain off the excess oil remove excess oil with spoon)
Add tomato sauce/chicken broth mixture and stir well. (It will be moist.) Stir into rice, turn off heat, cover pan and let steam as you would if you were following directions for making excess rice.
When rice is done, add all your extra goodies. I added peas, shrimp, and lobster bits. Next time I make it, I might add chopped cilantro. I've also added a good teaspoon of grated lemon peel for added flavor.
Once it's all mixed together, you can bake it for about 1/2 hour or so in a 350 degree F oven if you need to "dry" it out a little bit. Play this by ear.
