I double checked with my Ph.D. candidate dh, and Paul says caffeine is an ester, which only breaks down in extremely high heat. He says the liquid would basically have to carmelize to MAYBE get rid of the caffeine.

The caffeine has nothing to do with the tenderizing. In coffee, or decaf, it's the tannins, the same as what's in wine, that tenderizes. In coke, including caffeine free coke, it's the phosphoric acid. So using decaffeinated products of either should work for tenderizing purposes.
