Recipe: Chicken Cacciatore (Heinz Ketchup, 1957)

CHICKEN CACCIATORE


2 to 2 1/2 pound chicken, cut up
3 tablespoons shortening
Salt and pepper
1/2 cup sliced onion
1 clove garlic, minced
1/2 cup chopped carrots
2 tablespoons chopped parsley
1 cup Heinz Tomato Ketchup
1 cup water
1 bay leaf
1 teaspoon salt
Dash pepper
2 tablespoons dry red wine or sherry

Brown chicken in shortening. Sprinkle with salt and pepper. Remove chicken from skillet.

Saute onion and next 3 ingredients in skillet until lightly browned.

Stir in ketchup and remaining ingredients. Add chicken. Simmer, covered, 1 hour or until tender.

Makes 4-5 servings
