ZUCCHINI PICKLES..L.A.COUNTY FAIR

Hi again...Nancy...
Here is yet another recipe from the L.A. County Fair 1988, and a lst placer too!!
P.S. the enchilada recipe was a 1st placer too.
ZUCCHINI PICKLES
16 cups sliced zucchini
8 small onions - sliced and rings separated
1/2 cup salt
4 cups vinegar
l cup water
4-1/2 cups sugar
1/2 tsp. ground cloves
1-1/2 tsp. turmeric
2 tsp. mustard seeds
2 tsp. celery seed

Combine zucchini, onions and salt in large pan. Cover with ice water and let stand for 3 hrs. Drain. Combine vinegar, sugar, water and spices in large pan. Bring to boil...and add zucchini and onions. Pack into clean, hot jars and seal. process in boiling water bath for 5 minutes... Yields: 6 pints.
