Recipe(tried): Zucchini Garden Pizza

Garden Pizza
1 c. mozzarella cheese
1 T. vegetable oil
1/2 C. Parmesan cheese
8 ozs. tomato sauce
1 pkg. pizza crust mix
1/2 tsp. garlic
1/2 tsp. fennel (pizza flavor)
1 tsp. basil
2 c. sliced mushrooms
1 tsp. oregano
1 1/2 c. shredded carrots
1 tsp. brown sugar
1 c. finely sliced or
shredded zucchini ( I always use more.)
1/2 c. chopped onion
Preheat oven to 400 degrees. Spray a 14-inch pizza pan with
non-stick spray. Press prepared pizza crust onto pan and bake
only for 14 - 15 minutes. Meanwhile, saute' mushrooms,
carrots, zucchini, and onion in oil over medium heat for a few
minutes. When crust is prebaked, sprinkle with vegetables,
sauce seasonings, sugar, and cheese, Bake for 15 more
minutes.
This pizza tastes good! I don't remember where I got the
recipe, but it is a permanent one in my book. You can vary
the amounts of zucchini & carrots to make a larger pizza. A
good way to use zucchini from the garden.
