RECIPE; ZUCCHINI & ENCHILADA CASSEROLE

Hi Nancy,
I've never tried this...but I'm going to...it sounds yummy...it also came from the Los Angeles County Fair cookbook...1988.
I'm typing it just the way it's written...so you may have to guess a little here.
ZUCCHINI AND ENCHILADA CASSEROLE
2 cups grated zucchini
2 cups Mexican hot sauce
12 6-inch corn tortillas
16 oz. grated cheddar cheese
4 cups ricotta cheese
Bake at 350 degrees for 30 minutes. Serves 8

This sounds pretty good to me....
