Recipe: ZUCCHINI SQUASH BAKE-ITALIANA

Hi Nancy,
I don't know about the squash from the restaurant...what's it like?
We have those restaurants here in Georgia...but only ate there a couple times..and never had the squash..try to describe it...
anyway,,,here is one of our family favorites.
ZUCCHINI SQUASH ITALIANA
4 medium zucchini, shredded
1 medium onion, shredded
l medium bell pepper, shredded
l cup grated mozzarella cheese
1/4 cup. parmesan cheese
2 soda crackers, crushed
2 cups unseasoned dry bread crumbs
l tsp. salt
1/2 tsp. garlic powder
1/4 tsp. thyme
2 eggs, slightly beaten
1/3 cup olive oil
Mix everything together...put in a square 8x8x2" pan..sprinkle some cheese on top. cover with foil and bake l hr at 400 degrees.
