Read your post, so I pulled out an old (1988) Los Angeles County Fair REcipe book and found this one...try it...you'll like it!!
P.S. It won 1st place..by Sue Wolfe of Yorba Linda, CA
CHOCOLATE ALMOND ZUCCHINI BREAD
3 eggs l tsp. soda
2 cups sugar 1 tsp. cinnamon
1 cup salad oil 1/4 tsp. baking powder
l tsp. vanilla l cup coarsely chopped almonds
3 cups. flour 2 oz. unsweetened chocolate
l tsp. salt 2 cups grated zucchini
Beat 3 eggs until lemon colored. Beat in sugar and salad oil. Melt unsweetened chocolate over hot water, then stir into egg mixture along with l tsp. vanilla and grated zucchini. Sift dry ingredients together. Stir into zucchini mixture with the chopped almonds; mix well. Bake in 2-well-greased 9x5 loaf pans. Bake at 350 degrees for 45 min. - l hour, or until done
Cool in pans..make 2 large loaves.
