Here are two recipes which are favorites of mine. I have many more which I will be happy to share with you.


ZUCCHINI CRAB CAKES

2 cups grated squash, squeeze out the juice
2 eggs, well beaten
2 cups bread crumbs
1 tablespoon mayonnaise
1 tablespoon Old Bay seasoning
1 small onion, grated

Mix all ingredients well and make into cakes. Flour on both sides and
fry in hot oil until brown.


ZUCCHINI CASSEROLE

6 cups sliced or shredded zucchini
1/4 cup chopped onions
1 can cream of chicken soup
1 can sour cream
1 cup shredded carrots
2 cups herb-seasoned stuffing mix
1/2 cup butter, melted

Saute zucchini and onion in a small amount of oil. Combine cream of
chicken soup and sour cream. Stir into zucchini; add carrots. Place
in buttered casserole.*

Combine stuffing and melted butter. Pile on top of vegetables. Bake
at 350 degrees uncovered for 45 minutes.

*Or spread half of stuffing mixture in bottom of baking dish, spoon
vegetables on top, and sprinkle remaining stuffing mixture over
vegetables. Bake.
